<jats:p>It's a tough time for food manufacturers. Every week, it seems,government regulators announce that some food or other is being recalled for bacterial contamination, toxins, or carcinogens. Among the recent headlines, dozens have been sickened and two have died in an outbreak linked to contaminated pastries in Rhode Island. In January, a dioxin scare halted sales of poultry, eggs, and pork from Germany. And let's not forget radiation in Japan, oil in the Gulf, and melamine in pet food and powdered milk. If the average American never thought about food safety before, the past few years have made it abundantly clear they need to start. Fortunately, food producers and inspectors are way ahead of them.</jats:p>
