The aim of this thesis was to increase knowledge about the interaction between lactic acid bacteria (LAB) lactic constituents with specific phages. We studied the diffusion of the fagorresistencia of autochthonous strains of Lactococcus lactis and Streptococcus thermophilus phages against native. Also checked fagorresistencia dominant mechanisms for each species. Wild strains of Streptococcus thermophilus studied mostly showed a high resistance against native phage used (by various means), making it potentially useful strains for industry. In addition, wild strains of Lactococcus lactis, said phage high resistance due to the presence of intracellular mechanisms very effective. We also studied the incidence of lysogeny in thermophilic lactobacilli, Lactobacillus helveticus and Lactobacillus delbrueckii subsp. bulgaricus, analyzing the effect of the influence of temperature and the concentration of mitomycin C (MC) in the release rate phage. For commercial strain L. delbrueckii subsp. bulgaricus Cb1 was possible to isolate active virus particles, which could spread on two host strains. This showed that commercial strains can be lisógenas, making them risky for industrial use. We also studied the relationship between cellular heterogeneity and fagorresistencia for morphological variants derived from strain L. delbrueckii subsp. bulgaricus Ab1 confirmanfose that phage resistant clones used (YAB) belonged to one of the morphological variants present in strain and also be able to obtain a clone with high fagorresistencia and good technological properties, interesting for its use in industry.Palabras clave – provistas por el repositorio digital
